Double Cacao Protein Powered Muffin Recipe
(Gluten-Free, Dairy-Free)
to prepare:
Preheat the oven to 350 F. Prepare muffin tin by spritzing with coconut oil or lining with muffin liners.
In a large mixing bowl, combine flour, Provenance Meals’ Camu Cacao Superfood Protein Powder, salt, and baking soda.
In a small bowl, combine eggs, milk, vanilla, melted and cool coconut oil, and your choice of natural sweetener. Whisk well to combine, then add the wet ingredients to the dry. Gently fold together.
Finally, add in the dark chocolate and stir just to combine.
Pour batter into muffins so that wells are ⅔ full. Bake in preheated oven for 18-22 minutes or until a knife inserted into the center comes out mostly clean. It’s okay if they’re still a touch underdone, as they’ll continue cooking once you remove them!

¼ cup melted coconut oil
¼ cup honey or maple syrup

½ cup chopped dark chocolate or chocolate chips
