You may have posed the question before: what is the difference between Key limes and regular limes? Persian limes — the most commonly found species at grocery stores across North America — are larger and contain more juice. Meanwhile, their tiny cousin the Key lime holds a more aromatic, tarter juice with floral notes. Both types are incredibly potent sources of nutrients that aid in iron absorption and may improve your immune system due to the concentrated amounts of vitamin C.
Balancing out the citrus in this frozen dessert is the forever trending ingredient, avocado. While it has taken restaurant menus and our Instagram feeds by storm over the past few years, its place in civilization actually began over 5,000 years ago in the Mesoamerican region of Central America. Its tree bark, leaves, and seed were used for medicinal purposes, while the smooth flesh was eaten to provide nutrients and aphrodisiac properties.

Fast forward to today, avocados are one of our favorite foods for their versatility. This creamy fruit blurs the lines between savory and sweet, making it the perfect base for a creamy sauce, a fresh salad, or even a refreshing ice pop. It also provides your body with essential healthy fats that maintain hydration and boost the body’s absorption of nutrients, along with B-vitamins that support cell function and convert carbohydrates into energy.
Creamy Key Lime Ice Pops
Quench your craving for something sweet in the summer heat with this refreshing recipe. While regular limes suffice as a substitute, we recommend Key limes for a more aromatic and floral flavor profile.
To prepare:
Add all ingredients to a high-speed blender and blend until smooth. The mixture will be thick, so you may need to stop and scrape down the sides a few times.
Once everything is well combined, scoop or pour into ice pop molds.
Freeze 4-6 hours or overnight.

Yields 4-6, depending on the size of your ice pop molds1½ avocados
¼ cup + 1 tsp. key lime juice
½ cup maple syrup
¼ cup unsweeted plant-based milk (we use Elmhurst Oat Milk)
Zest of 1 lime
